hey pumpkin!

This morning I went to WI and lost another 1.6 pounds.   I am now at 132 and only 2 pounds away from goal! WOOP!  I am so excited!  I got my very last 5 pound star today.  It was kind of a shock.  I gotta get my mind right.  I mean I am skinny, but I don’t feel like I look skinny.  Today I am wearing a size small shirt and jeans that I used to have to lay on the bed to get on.   That is where it clicks with me that I’ve lost weight.  I am wearing smaller sizes. 

It’s hard when you see the same people everyday because they don’t notice.  Next week is Brandon’s (the husband) aunt’s birthday party so we will see if anyone notices.   I hope to be at goal by Valentine’s day! 🙂

I had a 2 point Soy Joy bar and a Wild Cherry Pepsi this morning.  Then I went through McDonald’s for Brandon like I do every Saturday.  It has become easier and easier because their food is not worth the points.  (Well, at least not today).  

While he ate that, I made Pumpkin Oatmeal.  It contained:

1/4 cup quick oats

1/4  cup Hot cereal from TJ’s

1/2 cup pumpkin (not pumpkin pie filling)

a sprinkle of country pumpkin granola

It was warm and delicious!

Today we are going to a baby shower and hopefully there will be something there I can eat for lunch.  I think I am going to eat a banana before I go.

Friday fun

Friday is my favorite day of the week. I work 10 hour days and then have Friday’s off. I love this. I get to go shopping (mainly grocery shopping) and clean the apartment. I usually go grocery shopping first then come back and clean while dancing to girly music or country (depending on my mood). 🙂

I usually try to create a new type of breakfast on this day because I have more time. This morning I made bowl of oatmeal along with egg beaters, a sprinkle of cheese and half a slice of turkey bacon. It was fabulous and just 3 WW points.

Lemme tell ya,  it really stuck with me.  I ran errands and really didn’t feel too hungry until dinner.   It’s such a nice feeling to be satisfied and not too hungry or too full.  Oatmeal variations are really becoming a new favorite of mine.

We went to dinner and I got a Baja Chicken Salad.  It was yummy, but my stomach was not happy afterward.  Then, we went to Babies-R-Us for a friend’s baby shower tomorrow.  I have never been in there, but it is stocked full.  It’s like Target, but just baby stuff.  Then we went to the Cheesecake Factory for dessert to go.  Brandon (the husband) got Dulce de Leche and I got Chocolate Cake Cheesecake.  If I’m going to get cheesecake it must be pumpkin or something with chocolate!

18. I am a romantic and I believe it’s truely the little things that make my heart melt.
19. I have a food blog and I love to write it.
20. I hate my alarm clock.
21. I love Saturday naps with Brandon on the couch.
22. I am glad I moved away from Wilmington, but I miss the beach.
23. I believe I made a mistake in my college decision.
24. I hate when I shave my legs and then shiver. What was the point in shaving my legs if it can grow back when I shiver while getting out of the shower?
25. I am impatient and I believe Brandon has made me less impulsive and more of a worrier.


I have been so busy that I haven’t been able to blog. I have been leading the LASIK surgeries lately and laying out everything for the doctor, assisting in the surgeries and cleaning up (all after working all day) is exhausting. I have been coming home, making dinner and laying on the couch. I haven’t been up to much lately, just work and house stuff. We should be getting Brandon (the husbands) W2 form soon and then we can finally send in our loan application for our house! YAY! I cannot wait to move out of our tiny apartment and actually have some storage space.
I have a few more recipes that I need to post and I’ll get to them… one day 😉
Meanwhile I have been entering in a lot of drawings and contests lately. (Who doesn’t love winning stuff?) I have become a lot more environment friendly since I started my weight loss journey and take my own bags with me to the grocery store. I entered a contest and won a bag!! I saw this lady on CNN who makes “green” bags which are fabric bags. You have to take a picture of yourself using the bag in the store then she puts it on her website. The link to the site is

She has lots of environment friendly tips and is a great resource for how to do things more “green.” I will post a pic of myself using the bag in the very near future… I just don’t have it in me tonight guys

Pepperoni Calzone

I lost my creative-ness on the name of this. If you can come up with a creative name for a calzone let me know… I tried “Cal-in the-zone,” but I didn’t like it…oh well…

I usually use Trader Joe’s Whole Wheat pizza dough and make a pizza once a week, but this week I really wanted a calzone. It is 2 points per slice of pizza and Brandon (the husband) and I usually split one. I love pizza. I kind of have a pizza addiction. Ok pizza and I have a relationship just don’t tell Brandon 😉

Calzone Ingredients:
Trader Joe’s whole wheat pizza dough
2 tablespoons tomato paste
1/4 cup TJ’s fat free pizza sauce
17 slices Turkey Pepperoni
2/4 cup TJ’s lite mexican blend cheese
Any other toppings and spices you like on your pizza. I used red and green peppers, oregano, onions, and tomato slices. (Points will vary depending on what you use)
Preheat your oven to 425 degrees
Lightly flour your pizza pan then roll out crust. Make sure crust has been sitting out to get to about room temp. I usually free the dough and then let it sit in the fridge for about 8 hours then Brandon takes it out to sit on the counter about 2-3 hours. If you don’t freeze it, then just set it out maybe an hour or two before you use it. It just stretches easier. I use my hands to spread the dough, it often sticks to my rolling pin.

Spread the tomato paste on first, then the pizza sauce.
Then add the cheese, and other toppings. Cover the toppings with the pepperoni.
Fold over and press the edges together with your fingers. Cut several (4-5) slits into the top of the calzone to let the steam escape.
Cook for about 15 minutes depending on your oven. I cooked it until it looked brown on top. The dough should feel pretty hard on top when finished.

The point value for the whole meal is 26. We cut ours in two and it came out to 12 points per serving. If you cut it into four servings, it would be 6 points per serving.

My cup of tea

So today I weighed in at 133.6!  That is 3.6 pounds from the healthy goal weight that I set for myself.  My weight range for my height is 150-125.  I started this journey at 152.6, which is 2.6 pounds above the healthy range range for a woman who is 5’5″.   130 is a healthy weight I believe I can manage.  I am setting my goal for Valentine’s Day, but it may take a bit longer.  I swear, once you get closer to goal, it seems to take forever!

When I got home I decided I needed some relaxation from this house building/contract negotiating stuff, so I turned it to Exercise TV on Demand.  I am so happy I found this channel because it gives you free workouts.  I decided to do a 20 minute yoga routine called “Zen in Your Den.”  It was so relaxing and really put my mind at ease. 

I had a cup of peppermint tea after yoga and painted my toe nails.  The benefits of peppermint tea are amazing.  The University of Maryland Medical Center wrote an article about peppermint and it’s health benefits.  You can check it out at the end of the post…

Tea is also something nice to have to warm you up. Warm liquids such as tea and soup warm you up and make you feel full. I often take soup to work and this trick really works.

Around 1:30pm, we met with the mortgage broker today and signed the paperwork for our loan application.  Whew! I felt like my signature should be shortened after all of that.  I am excited about the house, but tired of all the legal stuff.
We went Mellow Mushroom with Brandon’s (the husband) cousin and his fiance.  It is my favorite pizza place.  I could live on their crust alone. I ate four pieces! Don’t freak out, I always do and still lose. Pizza is not something I will give up on or reduce the amount. Especially at Mellow Mushroom! We didn’t eat much today so we really ate well tonight. That’s what weekly points are for 🙂
As far as the rest of the weekend goes, I have a few more recipes that I need to post and I am getting so tired I am about to pass out. Hopefully, I will get to those tomorrow. Hope everyone had a good Saturday!
