The oatmeal thread

So I have a new love in my life…yep, it’s oatmeal.

Oatmeal is so versatile.  It’s like the chili of breakfast food.  I can throw lots of yummy stuff in the pot and it tastes amazing!

Here is a list of the yummy things you can add to make a low point (and filling!) breakfast:

1/2 banana

granola

canned pumpkin

semi-sweet chocolate chips

pb chips

mini marshmallows

splenda

chocolate syrup, maple syrup, regular syrup

pudding

graham crackers

marshmallow fluff

pb (and lots of it!)

vanilla soy milk

raisins and brown sugar

muffin crumbles

berries

yogurt

cottage cheese

fruit

chocolate bar pieces

These are the items I have experimented with lately.  I like to keep my oatmeal under 3 points.  Right now I have been eating a lot of semi-sweet chocolate chips and a teaspoon of pb in my oatmeal.

Mangolicious Blueberry Waffles

This recipe was delicious!  We always eat breakfast at the apartment together on Saturday mornings.  Whether it’s making it or bringing food back to the apartment, it’s just nice to eat together.

Here is what you need:

1 cup of TJ’s Mangolicious Frozen Fruit. (It’s a mix of blueberries, raspberries and mangos mmmmmm!)

2 TJ’s blueberry waffles

1 tablespoon frozen Cool Whip Free

Heat 1 cup of mangolicious mix in the microwave for about 1 min, 15 seconds

toast waffles to your liking

add a tablespoon of Cool Whip Free to your plate at the end

I made two servings with the mangolicious for the husband and I.  So that is 1/2 cup per two waffles.

WW points: 5 (I ate a couple extra pieces of the husbands mango too!)

 Side note: Check out the pretty daffodils!  These popped up in less than 24 hours 🙂

Love is in the air…

So I am a super nerd and always make heart shaped chocolate chip pancakes on Valentine’s Day.  I love these and portion control is great with the metal heart cookie cutters.  Excuse the styrofoam plates, they were given to us a while back and we are trying to use them up.  We are usually environmentally friendly 🙂

Here is my recipe:

1/2 cup white flour

1/2 cup whole wheat flour

1/4 cup quick oats

1 tsp. baking powder

1/4 teaspoon baking soda

1/2 teaspoon cinnamon or cinnamon sugar

3/4 cup unsweetened apple sauce

1/2 cup ff sour cream

1/4 cup egg beaters

1 tsp. imitation vanilla extract

1/3 cup TJ’s unsweetened vanilla soy milk

1 tablespoon chocolate chips

Mix all ingredients together.  Add water and stir until you get your desired consistency.  The heart shaped pancake maker requires a little thicker of a pancake so I didn’t add too much water. 

Heat skillet on medium-high.  We were starving so we turned the heat up!  Spray a quick spray of PAM on a skillet or griddle. Pour mix into hearts, or just make your own circular pancakes if you don’t have a shaped cookie cutter.   Makes about 9 pancakes at 2 points per pancake!

Today I had a bowl of s’moates and then I went to Target and Trader Joes.  I enjoyed the chocolate chips, marshmallows and oatmeal in my sweats then got up and changed before going to the stores.  I am now finally going to take a shower and getting ready to go to the mall.  I am going to try to find a dress for Valentine’s Day and get a haircut!

hey pumpkin!

This morning I went to WI and lost another 1.6 pounds.   I am now at 132 and only 2 pounds away from goal! WOOP!  I am so excited!  I got my very last 5 pound star today.  It was kind of a shock.  I gotta get my mind right.  I mean I am skinny, but I don’t feel like I look skinny.  Today I am wearing a size small shirt and jeans that I used to have to lay on the bed to get on.   That is where it clicks with me that I’ve lost weight.  I am wearing smaller sizes. 

It’s hard when you see the same people everyday because they don’t notice.  Next week is Brandon’s (the husband) aunt’s birthday party so we will see if anyone notices.   I hope to be at goal by Valentine’s day! 🙂

I had a 2 point Soy Joy bar and a Wild Cherry Pepsi this morning.  Then I went through McDonald’s for Brandon like I do every Saturday.  It has become easier and easier because their food is not worth the points.  (Well, at least not today).  

While he ate that, I made Pumpkin Oatmeal.  It contained:

1/4 cup quick oats

1/4  cup Hot cereal from TJ’s

1/2 cup pumpkin (not pumpkin pie filling)

a sprinkle of country pumpkin granola

It was warm and delicious!

Today we are going to a baby shower and hopefully there will be something there I can eat for lunch.  I think I am going to eat a banana before I go.

Friday fun

Friday is my favorite day of the week. I work 10 hour days and then have Friday’s off. I love this. I get to go shopping (mainly grocery shopping) and clean the apartment. I usually go grocery shopping first then come back and clean while dancing to girly music or country (depending on my mood). 🙂

I usually try to create a new type of breakfast on this day because I have more time. This morning I made bowl of oatmeal along with egg beaters, a sprinkle of cheese and half a slice of turkey bacon. It was fabulous and just 3 WW points.

Lemme tell ya,  it really stuck with me.  I ran errands and really didn’t feel too hungry until dinner.   It’s such a nice feeling to be satisfied and not too hungry or too full.  Oatmeal variations are really becoming a new favorite of mine.

We went to dinner and I got a Baja Chicken Salad.  It was yummy, but my stomach was not happy afterward.  Then, we went to Babies-R-Us for a friend’s baby shower tomorrow.  I have never been in there, but it is stocked full.  It’s like Target, but just baby stuff.  Then we went to the Cheesecake Factory for dessert to go.  Brandon (the husband) got Dulce de Leche and I got Chocolate Cake Cheesecake.  If I’m going to get cheesecake it must be pumpkin or something with chocolate!

Kitchen Sink Pancakes

Brandon (the husband) woke up and looked over at me and said “I want some pancakes.”

I haven’t made them in a while so I agreed.  I always have made regular pancakes and put chocolate chips in them.  I just took the mix and added water until they were a good consistency.  Not any more…

Whenever I cook something I look through cookbooks, recipes online, and recipes given to me, put some of the similar ideas together and make them lighter.  Here is what I came up with this morning…

Kitchen Sink Pancakes:

1/2 cup quick oats (I used generic from Food Lion)

1 cup soy milk (Unsweetened Trader Joes brand)

1 teaspoon vanilla extract

1/4 cup whole wheat flour

1/4 cup white flour (Brandon doesn’t like a lot of wheat taste)

1 tablespoon honey from the honey bear 🙂

1/4 cup Egg Beaters

1 tablespoon unsweetened apple sauce

2 teaspoons baking power

1 tsp. cinnamon

1/2 teaspoon nutmeg ***If you do not like things with a lot of “spice” taste, leave this step out.  I will next time.  Nutmeg is a strong spice and I could taste it throughout the whole recipe.  Not a fan…

1 tablespoon semi-sweet chocolate chips

Some people make pancakes by separating the dry ingredients and the wet ingredients and mix them in two different bowls.  I was tired this morning and ended up just throwing everything in one bowl.  I mixed up the ingredients with a whisk until well mixed.

I put the mixture into a 1/4 cup mixing cup and poured onto my PAM sprayed griddle.  I cooked them on medium about 2 minutes (or until brown), I just peaked at the bottom and flipped.  I made four at a time them had one left over. 

I put about five semi-sweet chocolate chips in each pancake.  The recipe made about nine total.  Here are the progression pics…

I had a cup of unsweetened soy milk with mine 🙂  I drizzled a little Mrs. Butterworth Sugar Free syrup on each.

The recipe made 9 pancakes.  The point value came out to be one point per pancake! 🙂 13 points for all 9.  If you ate 3 pancakes like me (could you really only eat one pancake?), you could just divide 13 by 3 and get about 4 (4.3 to be exact) points for the 3 pancakes 🙂
