Friday’s Finds Part Deux

Today’s Friday’s Find is Trader Joe’s Very Mini Vanilla Meringues.  These one calorie per meringue are delicious!

The nice thing about them is that they are very light.  Meringues are basically air puffed cookies and are known for their lightness.  The serving size is100 meringues for 100 calories. Makes since right?  But these cookies are so sweet that a small number will certainly satisfy your sweet tooth. The husband even thinks they are very sweet and he has the biggest sweeth tooth of all! So if they can satisfy him, then I suggest you try them on your sweet tooth too!

Mint Chocolate Pudding Parfait

Since the husband and I are trying to save money for our house, we haven’t been going out to get dessert like Coldstone or Starbucks as much.  I wanted something cold tonight for dessert and had some pudding made so here is what I came up with:

Here is what you need:

2 martini glasses

2 servings chocolate sugar free/fat free pudding

4 tablespoons frozen Cool Whip Free

2 thin mint girl scout cookies

Add one layer of pudding to each glass.  Crumble half of a thin mint onto the pudding. 

Add a layer of cool whip, then another layer of pudding, then another layer of frozen cool whip. 

Crumble the remaining cookie halves onto the top of each final layer of cool whip. 

Add a strawberry for decoration 🙂 If you have a fresh strawberry, then use that.  Ours were frozen so they ended up just being for decoration! Each parfait should have four layers and one cookie crumbled per parfait.

Angel food cake with blueberry topping

 

Here is what you need:

1 box Pillsbury Angel Food Cake Mix

1 container Cool Whip Free

1 container of blueberries

Make angel food cake according to box directions.  I evenly divided batter into two 9 inch springform pans to make two layers.  Once layers are cooked, lay them out to cool. 

Spread a layer of cool whip free on the first layer.  Then, carefully stack the second layer on top and spread another layer of cool whip.  Rinse blueberries and scatter them on the top of the cake.  I served this at our Super Bowl party and everyone wanted second! 🙂

WW Point Value: 1/12th of the cake equals 3 points

Chocolate Covered Strawberries

I love to make special desserts for special holidays.  I wanted to have chocolate covered strawberries for Valentine’s Day, but buying them is way too expensive not as healthy as I could make them! 🙂

Here is what you need:

 about 30 strawberries with caps on

2 sections of TJ’s unsweetened baking chocolate

1/2 bag of semi-sweet chocolate chips

a rubber scrapper for stirring

a pan with aluminum foil

Directions: Rinse strawberries and leave out until room temperature

***note, strawberries must be dried completely before you dip in chocolate otherwise you will end with grainy chocolate (yuck!)

Next, heat about a half of your chocolate chips and one section of the baking chocolate.  Heat in microwave in 30 second increments stirring in between

***Chocolate should look shiny and not have a lot of lumps to it- do not burn chocolate!

Lay a pan covered in non-stick spray (spray only a little bit so the chocolate does not stick).  Then, dip each strawberry in chocolate and lay out to dry. 

Leave chocolate covered strawberries out to harden for about one hour.  Then you can refrigerate them or eat at room temperature.  I like mine really cold so I left them in the fridge over night.

With both types of chocolate, I estimate them to be about 2-3 points per strawberry depending on how much chocolate you use!!  Enjoy 🙂

Rocky Road Brownies

Here is an idea that could get you into trouble…thankfully I made them in a muffin pan so that they are evenly portioned.
Rocky Road Brownies:
1 package No Pudge Brownie Mix
2/3 cup non-fat vanilla yogurt
Semi-sweet chocolate chips
Mini Marshmallows

Preheat oven to 350 degrees.
Mix yogurt and brownie mix together. The mix is super super thick so heads up! Spray bowl with kitchen cleaner so you don’t lick it! 😉
Spray muffin pan with non stick cooking spray. Try to evenly spoon mix into 12 individual servings. Add chocolate chips (I use about 5 per muffin) and mini marshmallows (about 3-4 will do). Push down chocolate chips and marshmallows into the middle of each serving of brownie mix. Bake for about 32 minutes and enjoy!

 

***Update: I put peanut butter chips in these the next time I made them, and they were extra delicious!

Starbucks dessert

We went to Outback tonight. I got my usual Chicken on the Barbie (7 points) and a few pieces of bread (around 6 points).  We wanted some dessert, but it is way too cold for ice cream.  I had a giftcard from Christmas to Starbucks so we went there.  I got a Grande Skinny Cafe Latte with 2 pumps of Sugar Free Cinnamon Dolce syrup (3 points).  It is cheaper than a Cinnamon Dolce Latte (by just asking for the regular skinny latte then adding sugar free syrup) and sometimes they over do it with the syrup.  2 pumps of syrup is just right 🙂
